The way it often worked was a bully said something insulting, perhaps about your wife or another female member of your family. You were honor bound to challenge him to a duel or else be considered a coward, in which case you would become an outcast. As the one challenged, he got to pick terms most favorable to him, resulting in your probable death.
It also would often set off a wave of reprisal duels,not unlike modern street beefs. This one in Natchitoches Parish resulted in 11 subsequent killings LINK

Dueling is legal in Texas. Not to the death, but legally, if you want to fight someone, and they you, you can do it provided a law enforcement officer is there to witness it.
