We have a large (31" x 17") granite-composite sink divided about 70/30, with a garbage disposal on the small side. Love it.
I easily fit a 7.25 quart Dutch oven or a large casserole dish in the big side. Meanwhile, the small side and disposal are available for other uses.

I’ve had both and I prefer the single basin. My big gumbo pots, baking sheets and what not don’t fit in double and are difficult to wash in there.
I used the main sink to soak things, wash dishes, etc. I had a smaller prep sink in my island and used that for defrosting. I also used it for when I’d buy fresh flowers and needed to stick them in water for a bit before I could get to putting them in a vase.
One thing I will say is I’ll never do a ceramic farmhouse apron single basin again. It’ll be steel. Though the ceramic is pretty and easy to clean, it is hard on dishes. I broke several glasses and plates on accident. Hand would slip and I would drop something while washing, or a glass would fall over onto it and shatter it. My steel basin sink has never done that.
ETA: saw someone else mentioned it, but single basins are the GOAT for infant bathing. The little tubs fit perfectly or better yet, clean it out well and fill it with warm water and they can sit right in it. So much easier on the back than bathing them in a bathtub.

Because how else are we supposed to be able to immediately tell that the house we are in was flooded in 2016?

I have memories of the double sink in the house I grew up in (Mom & I were the dishwashers). Mom would fill one side with sudsy water and let the dishes "soak". Then it would get all cold and gross. I preferred washing each dish by hand, but apparently that "used too much water". Single basin now, rinse the dishes and put in the dishwasher. There are never stray dishes in the sink, they immediately get rinsed and put in the washer.

I have to soak certain things. I cook my gumbo and sauces in a magnalite and I hate that it doesn’t fit in my old double basin sink. Older home and I miss my single basin.

Probably so. We are 2.5 years into flipping a 4500 sq ft home and have done the majority (aside from new island and counters, painting the exterior brick) by ourselves. I have to pace myself when asking the husband to start on the next project. We just transformed a useless downstairs closet by the entry into a mud area and that was relatively easy. He started wallpapering the powder bath last week and it’s 1/4 done because he’s real mad at it (and me)

Small sink?
I have a large double basin and can fit any pot, including my largest gumbo pots. Not all double basins compromise size.

My house was built in 1999 and has a 70/30 split sink with the garbage disposal in the smaller 30 sink. I fricking hate it. It's a pain in the arse trying to rinse food from a large skillet or pot in to the smaller sink. Half the time my wife rinses stuff on the bigger side and then scoops the detritus out with her fingers and flicks it in to the smaller side. 
When this garbage disposal dies, which it seems is soon based on the sounds its making, I'm putting the new one on the 70 side. OR, I'm putting in a single basin. But that would involve cutting the granite counter top to widen the 30 side. So I don't know if it's worth that.
Either way, my vote is for single basin.

And wall paper in bathrooms was never a good idea. Let's hang paper on the wall in the most humid room in the house.

I never understood this. If you're going to take the time to scrub the dish why not just add a little soap and then it will be washed? No need to put in the dishwasher if you have already hand scrubbed it.
