I’ve been trying to convince the wife to watch this with me. I think she’d find it hilarious but she thinks it looks stupid. What’s a really good episode I could get her hooked with. Preferably something with dale Bobby or cotton.

I think women just don’t like the show.

My favorites are when Hank takes Bobby hunting and when hank buys a new truck.
Plenty of good ones to choose from that I can’t think of off hand.

The episode where they burn down the volunteer firehouse. Someone also mentioned an all time great where Bobby eats all the Lutefisk

The father-son shooting competition. Hilarious, but sweet also.

I think the one where Hank rents an 18-wheeler to move a small amount of furniture to his mother's in Arizona is another classic (although I also agree with the Firehouse, Bobby learning self-defense, and many of the others mentioned).

But, my favorite probably remains The Shins of the Father, S1E8.

Off the top of my head these would be a good start I think.

The Son Also Roses
Dog Dale Afternoon
My Own Private Radio
I’m With Cupid
The Redneck of Rainy Street
The Buck Stops Here
Soldier of Misfortune
Man Without A Country Club
A Street Can Named Desire
My Hair Lady
Joust Like A Woman
The Witches of East Arlen

As others have mentioned, the one where Bobby learns self-defense, and I'd add the one where Bobby is a husky model.

Hank to Peggy: "I'm trying to stop an outbreak and you're driving the monkey to the airport."

The first 5 episodes are extremely strong, IMO, so just start there.

The Firehouse episode from Boomhauer's perspective is one of the single greatest moments in all of human history

Bill Louisiana episode

When Peggy gets arrested in Mexico and has to speak Spanish in court.

Also, the episode where Bobby joins the college meat grading team.

My wife didn’t want to watch it. I turned it on. Three episodes in, she decided it was great. Just turn it on and go.
