Squirrel Recipes?

Checked the recipe book and was surprised not to see one. Thinking a smothered gravy served over biscuits would be good.

Every squirrel recipe I ever heard of was basically cook the squirrels down. Brown them really good and make a gravy.

Yep - Season with salt, pepper and garlic salt. flour and fry. Make gravy, add onion to gravy. Add spuriiel and simmer with a lid for an hour. Will be fall off the bone tender. f you like, you can add carrots, frozen english peas, frozen
wholw kernal corn and potatoes and continue cooking until they are done and have squirrel stew.

Works well with raccoon, ground hog, and gopher too. Regardless of what anyone might tell you, possom is a bit greasy, and you must spoon off the fat several times during cooking.

Oh not recently, Aubie. Stadium Rat read that squirrels were high in cholesterol.

I always cook in a crockpot with a bit of broth, then debone.

After that, I make whatever I want. Add to a sauté, a gravy, make tacos, whatever

I quarter and put the pieces in a dish. I try to get them packed pretty tight. I put a bit of butter and season with Tony's. Cover and put in the oven at 250 until they're tender, usually about 3 or 4 hours. I eat them like wings.

Squirrel picante:

3 squirrels quartered
3 yellow onions (diced)
1 large jar of pace picante sauce
1 cup of water
1/2 cup vegetable oil
Salt, pepper, Cajun seasoning to taste.

Season squirrel quarters then brown in oil. Add diced onions and stir occasionally until wilted. Add water and picante sauce and cook on medium heat, stirring occasionally until squirrel is fork tender. Serve over cooked rice and enjoy.
