Russia but only after they join NATO and President Jack Ryan calmly has a smoke while a nuke is headed towards DC.

China could take whatever they want from Russia. Seeing Ukraine expose Russia as the weak nation it is, I can see China licking their chops.
They want and need more territory. Russia has lots that they’re not using.

China might have more men and better tech but no combat experience what so ever
Russia has some but most of them are dead now
Problem for both is their military leadership structure
NCOs and Jr Officers are not allowed to make battlefield decisions
It has to come from up top which leads to chaos real time
It would be a massive shite show especially bc both suck at logistics
China would win in a war of attrition bc they have more bodies to send

If China targeted specific, finite Russian territory, I'm thinking they could seize it and hold it.
If China just tried a general invasion of Russia as a whole, ala Napoleon and Hitler, they might meet the same fate as those two did. Especially if they kicked it off at this time of the year.

Invading and conquering another advanced country is no small thing. Anyone remember when China invaded Vietnam and got their asses handed to them? China might take some territory, but they would bog down.

Generally, China. Especially if they aren't giving a frick about winning hearts and minds.
China's available manpower is roughly 5x the entire population of Russia, China's population which is fit for service is estimated to be 13x Russia's. China spends nearly 2x on their military that Russia does.
While Russia has more of every other aircraft type, China has almost 2x the fighter/interceptor aircraft of Russia. As we've seen with Ukraine though, good anti-aircraft tech can easily balance that out.
Navally, China outclasses Russia.
This isn't a straight-forward win, the trouble China will have is that there's so fricking much land with much of the eastern region essentially uninhabited.
The other thing to take into consideration is Russia's oil fields and oil infrastructure.
Taking all this into account and assuming invasion of no other countries (Mongolia nor the 'Stahns), China would likely start with at least a straight zerg into Vladivostok (to capture the shipyards there), from there they could move up the Amur and through eastern Russia at will for at least a few weeks. While that's happening along the east coast, the other fight would be to race toward the west to capture as much territory (and as many oil fields) as possible before running into military resistance and without outrunning their supply lines. While holding a line with Russia they would also need to set up secure supply locations along the region they raced through.
From there it becomes a slog as Russia's greater amount of equipment faces off against China's far superior numbers.
