What’s your grilled wing method?

Not looking for sauced or Buffalo style. Just grilled wings with crispy skin.

If I have time I enjoy a hybrid method. Start on grill/oven, finish in air fryer.

Wings are best cooked hot, in my opinion (grilled vs smoked). 350 or higher. I simply season and grill.

The best-tasting wings for me are when I just throw all my leftover, close to the end bottle seasonings in a bag and toss them and grill.
The best wings I have ever had were at a bar in Branson, MO and I asked the chef to come out and asked what he did to them. He wouldn't give me his seasoning recipe but he said he smoked his wings, then grilled them to get char marks, and then deep fried them. They had perfect crispiness, and despite all that cooking, they were still very juicy.

Yep. Put your wings on a cooling rack in a sheet pan in the fridge for 24 hours so the skin dries. Then into the mini convection oven.
A 400 degree convection is hotter than hell and the circulation crisps the skin.
No need for baking powder.

Don't knock this until you try it...I did and immediately ate crow after trying them!
combine old bay, sugar, and cayenne pepper (~85:15 old bay to sugar and maybe a tsp. of cayenne, I don't really measure). Toss the wings in the mixture and grill until done. Just before you take them off the grill hit them with fresh lemon juice.
Again, when my friend first made these I turned my nose up at them, but was pleasantly surprised at how good they were and now that's my go to recipe for grilled wings.

Spray wings with cooking oil.
Cover with black pepper, homemade cajun seasoning and additional smoked paprika.
Turn one burner on low on the grill.
Put wings farthest away from heat source and cook and turn for 2 hours, finish over the flame. Crispy skin every time.

Kamado style cooker - 350-375° indirect until IT is around 165°. Take them off and coat in sauce.
Remove heat deflectors from grill and bring temp to 400°. Throw them back on for a few minutes a side. Remove and add more sauce.

Wire wing rack directly over medium hot coals with lid closed. Juicy wings with crispy skin done in 45 minutes to 1 hour.

I put my raw wings in a bowl and sprinkle with my SPPG (salt, pepper, smoked paprika, garlic) seasoning that I put on everything. Toss wings... sprinkle more until they're all nice and red and coated with goodness.
Put pellet grill on 250. Load the whole damn thing up with wings. After 30 min turn them and turn the grill up to 300. Then it's just knowing where your hot part of the grill is and rotating wings in and out of that area until they're all nice and cooked.
My wings turn out crisp, but it's a grilled crisp. Take them off and toss in sauce while still pipping hot. That allows the wing to take in sauce and still remain somewhat crispy and dry. I prefer mine dry compared to soaking wet in sauce. I've been grilling wings forever and actually prefer it over fried ones due to the ability to get good seasoning on the base wing. Hell, sometimes I don't even sauce them and just eat.

Air fry at 380 for 10 minutes
Flip and do for another 10 minutes
Coat with butter and Kosmo Q garlic parm wing dust

Vortex Accessory for the Weber Kettle makes the best grilled wings ever IMO.
I put them on naked, and rotate the weber kettle lid 45 degrees every 10 minutes. Do that four times and they are done so 40 minutes total.
Then I toss in my favorite dry rub and eat.
Turn out crispy and super flavorful every time.

I coat mine with some oil then coat liberally with rub. I then put my charcoal in baskets on each side of my grill, and put the wings on the rack in between the two charcoal baskets. I flip them over about 20 minutes in then let them go for another 15 minutes or so. They come out perfectly cooked every time.

I’ve used the baking powder trick, but it seems to be kind of like cilantro. Most people won’t mind or notice, but it’ll stand out to some people taste wise, and not in a good way.
