Boiled eggs or potato salad in gumbo ??

I'm from avoyelles parish and have always put hard boiled eggs in my gumbo . My wife is from Metairie and puts tater salad in her gumbo . What say y'all ?

I'm from the other side of avoyelles parish and traditionally did neither, but these days do potato salad on the side, not directly in the gumbo.

I’m a tater salad with the gumbo kind of guy. Boiled egg sounds like it would good too.

Yes to both. I prefer potato salad but I add an obscene amount of boiled egg yolks to my potato salad so really it’s the same difference.

Had a coonass come up to hunt last weekend and he made a beautiful chicken and andouille gumbo, then cracked 18 eggs in it. He let it sit lid on for 30 minutes. Poached gumbo eggs. First time I've had such and it and the eggs were great. We had potato salad and rice to go with it.

I guess I’m a rice purist. Can’t imagine either boiled eggs or potato salad in gumbo.

Potato salad in gumbo

Had a family friend growing up that put boiled eggs in chicken & dumplings
We put boiled eggs & potatoes in our spaghetti sauce

I tried the potato salad and gumbo in the same bowl thing on more than one occasion, because I thought I was missing out on something good. I wasn't.

Neither the gumbo or potato salad is improved by putting them in the same bowl. I can see the boiled egg because it remains neutral and it doesn't affect the gumbo.

I don’t understand the boiled eggs part of this. They won’t take any flavor assuming you are putting whole eggs into a simmering gumbo.

I grew up on a very plain potato salad. Boiled eggs and small potatoes. Mayo. Salt. Pepper. No freaking mustard or relish. It goes great with gumbo.

Yeah I don’t get this. Wound think you have to do like eggs in purgatory style here to have any effect

Also my vote is 100% potato salad. Potatoes, Mayo, pickle juice, onion, celery and Dijon.

Neither, in today’s world but I do like potato salad on the side. I’m old. Mama substituted boiled eggs for meat, to save money in gumbo, spaghetti and other things. There was meat and/ or other proteins but the eggs stretched the pot. :)

I like rice in gumbo and some crushed saltine crackers when the bowl is close to empty. Bad habits never die.

Out in Opelousas they eat gumbo with a sweet potato
