If you ever want to make birria at home, try this recipe. Seems to be real deal and tastes incredible...plus the woman is pretty damn cute.

That place is so good. I almost don’t want the word to get out, lest they get too popular, but I love their birria tacos.

For any NOLA folks, MAWI on West Esplanade has really good birria tacos. Not as good as my Food Board challenge winning ones, but damn good in a pinch.

I don’t think I’ve ever heard of birria tacos until the last few months. Probably became aware during the challenge or other posts on this board.
I guess I haven’t been paying attention, since my town has dozens of mom and pop restaurants and lunch counters at Mexican grocery stores.
So I searched online at some of my favorite spots and of course they serve them.
This pic is from my favorite grocery store lunch counter. I will be checking it out soon.

Made some before, but wanted to kick it up a notch, so I smoked a chuck. I made my birria from some cheap beef ribs. Chopped the chuck and simmered in the birria for 10 minutes or so just to get the flavors together, and went from there. They were incredible.

For the longest time, the only city I could find birria in, was San Antonio. As far as I know, it’s been a part of the city since immigrants arrived in SA from Jalisco

That being said, it’s mostly served as a big bowl of stew/soup, which is the way I prefer. Served with a side of tortillas and lime/onion/cilantro. The taco trend of birria is relatively new on the scene, and most places will serve a large portion of the stew if I ask.

Lambda, have you had Mawi's ceviche? Saw it in the case the other day and it looked good.
Agree about the birria tacos - really good, but I thought the pork taco special was better.

Love birria, as a stew, in tacos, or as a quesadilla. The key is the sauce. As opposed to the video, I make the sauce first, marinate the meat over night in the sauce, then slow simmer it in the sauce for about three hours. After two hours, you can break it up even further with a spatula. The recipe I use is a bit simpler than what she does in her video, but the result is as good or better than any I have found in a restaurant.

They are not crunchy, and they can be messy. If I'm making them at home, I don't usually drench the tortillas in the au jus, which helps a little, but they are still messy (and delicious).

you have to do a quick dip and not let them absorb, put them on as quickly as you can, put ingredients on in 30 second and fold and 1 min per side, I always make as mess trying to get it done quickly
slight crunch/chew to them.

I would definitely PIIHB.
Great video but that’s way to much work. I would spend half the day cooking just tacos and no time to even drink in between like when you smoke a brisket or ribs or pork butt.
I’ll stick to buying them somewhere for the time being.
