Which is your favorite in Baton? Or is there another option I'm leaving out.
I like Albasha the most and Roman's the least.

I like Roman's chicken and gyro the best (and their pizza), but I do Serops Express most often -- they outpace everyone on selection. They have like 25 side dishes (including chicken) to choose from for their buildable all-sides plates. The baba ganouj is my favorite from anywhere.
Can't speak on the non express versions of Serop's. They all have separate websites ( Perkins by Maxwells, Express, Corporate) with seemingly different menus/owners? Not sure the story there.
There's an Albasha Express by home and I gave it multiple tries, but every time it was like licking a salt block. I don't know if its just that location or what. I know people love Albasha, so maybe its just that one.

Serops>Albasha>Romans
They few times I have been to Romans the dude handling take out told me the story about how "they invented Lebanese ice tea" and gave me a free one, so bonus points for that.

IMO, they are all kind of equally meh. It's like licking a salt block. If I'm going to eat Greek food I would rather just go to Zorba's. It's more expensive...but much better.

Albasha Express is my go to.

Albasha and Serops (not express) are pretty close in my book.. Roman's a step below

Sadly none of them compare to Lebanons in uptown NOLA, but if I had to rank them:
1) Albasha
2) Romans
3) Serops Express (Haven't had none express in a long time)

Okay but have yall had the Beef Shawarma plate from Romans... The beef is wayyy better than any chicken or gyro from all 3.
But if we are going off of chicken Albasha is the best

Pretty much the same for me. Albasha on Bluebonnet is so close to my house that I eat it the most. But their shawarma is often non-charred and dried out. I also dont like that they dont give you even so much as a tomato on the shawarma salad. Its just chicken, lettuce, dressing.
I used to love the Romans on Essen. I get the one on Bluebonnet now and its pretty good. Their dishes seem to be a bit lighter and have more ingredients.
And yeah, Serops Express just pumps out the sides. Its like a Mediterranean Picadily

Well it’s actually Greek food and those mentioned in the original post are not Greek food so there is that.

I’ll throw in Cafe Petra for this quick Greek/Lebanese category. I think Cafe Petra’s chicken schwarma and gyros are very good

The least one liked for me is the Serops Express. The fact that you cannot get the pita toasted is my biggest reason. At least they could do is nuke it for 20 seconds. The Romans hammond air is the best out of their locations. Alibasha corporate has great schwarma salads.

I’m just here to say Serop’s has the worst pita of the 3 by far and Albasha has the best salad dressing.
