If you dont mind some fantasy type stuff, but nothing too much or overbearing.

The Hunter--Richard Stark aka Donald Westlake. Great terse prose and story.

My go-to easy reading is Carl Hiaasenn. A lot of his books have the same basic premise, but they're entertaining and easy to digest. Sick Puppy has probably been my favorite.
For non-fiction, my go-to is David Sedaris. His books are hilarious.

Our own author/poster Liquid Rabbit has his "Beers" series. They are easy to read and fun.
