I loved it, but man it was a chore at times. If I ever do a reread, I'm just reading the wiki articles for a few books.

I read up to book 6, then skipped to the Sanderson trilogy ending on the advice of a friend. Glad I took the advice since Book 6 was already getting to be pretty boring at times.

Here is the correct way to read WoT:
Read books 1-6.
Take your copies of books 7-11, pour gasoline on them, and burn them to ash.
Read books 12-14.

Yeah, pretty much. Jordan clearly had absolutely no clue how to wrap it up and was milking it for all it is worth, and then died.
7&8 are sort of ok, I would read those. 9-11 are absolutely HORRID. Just boring beyond all belief and worthless.

I know nothing about this series, but wouldn't you miss out on a lot of story by skipping 7-11?

I think it was 7 where I ejected from the series. Great start, and truly horrible when I gave up.
JRRRRRRRR Dragon something (of Pern?) author and the Kvothe guy studied at the same school. I'd assume.

7-11 are not as bad as most remember. What made them so infuriating and disappointing at the time was how long we had to wait between books, and then there was hardly any advancement of the main plot in this group. I remember thinking Jordan had no idea how he was going to finish the series. Now, though, with the series completed so well by Sanderson, books 7-11 can be enjoyed for what they are. While the main plot stalls, the world building is still great and by this time in the series it's fun just to spend time with these characters we know so well (even Nynaeve). Don't cheat yourself out of some pretty good books by skipping - what's the hurry to finish the series?

No.
7 is acutally decent, and 8 and 11 are okay, but books 9 and 10 are flat out terrible period. And the last two books aren't particularly great either, the ending is pretty meh overall (through no fault of Sanderson, he could only work with what he was given there).

I'm having a hard time getting through the first book. I enjoy it when I'm reading but I have a hard time picking it back up to finish.
I was hooked all through the first two books of ASOIAF. I wish I could find another series that I can't put down.

Robert Jordan repeats himself way too much. He says the same thing so much you know beforehand what characters are going to say next. He also explains things in details, extreme detail, that have little value in the grand scheme of things.
He also doesn't write female characters very well. I hated Nynaeve with a passion. It was almost as if he never met a female and wrote in female cliches.
The female thing wasn't nearly as bad as the repeative and unnecessarily detailed parts. The books could have been shorter and they would be classics.

Jordan's Conan books are so well written - light, fun, rollicking adventures that keep you turning the pages. It's such a contrast to the ponderous style of the Wheel of Time.

It took me halfway through the first book to get into it (started and stopped multiple times over a year). Once the action started though, it went full-bore.
As others have said the wait-time between releases of books 7-11 and the infinitesimal plot movement they included were big drawbacks. I can remember buying each one, reading them then thinking surely Jordan would have some sort of focus in the next one. But no. It wasn't until he died and Sanderson took over (and had a definite ending to write to) that the pace picked up again.

Sword of truth seriries by Terry Goodkind is awesome...my favorite series in that genre.

Eh, I liked the first group of books...then he goes off on a Randian/Libertarian rant.
I mean hell I've read all of Rand's books, and am a rabid libertarian, but that shite in the final books even got to me.
Authors need to keep their personal politics out of their damn stories. It's annoying, even when I tend to agree with the politics.
