I stayed at Park MGM last week. It was very well priced if budget is an issue for you. It's nice. It's nowhere near as nice as some of the other all-suite hotels on the strip. But it's centrally located, has some good food options, and the casino is non-smoking. I did not have time to visit the pool, but it looked nice and lively each day.
The rooms are dated for sure, but I spent very little time in it. You can walk to Aria staying inside, or take the tram all the way to Belagio. It's also a short walk going the other way to NYNY.

Here's another suggestion (if you stay at Mandalay) ...
There a bar called Ri-Ra that is the Mandalay Shopping area (adjoins Luxor). Irish Pub. Usually they have live Irish music in there and it can draw a very fun crowd. It also has a great selection of whiskeys/scotch.
Wife (no pics) and I have hung there until the early morning hours more than once. It's small, but if you get a good table, the people watching is every bit as fun as the drinks and music. Cool place to just hang and relax.

Mandalay Bay is nice, but far from all the action on the Strip. If you are on a tight budget, I'd recommend the Mirage. Fairly cheap for a Strip hotel, but it's right in the middle and near the really nice places. Be prepared for 65 y/o cocktail waitresses.

Just remember that bargain places draw bargain clientele. Smoky white trash tattooed crowd. I suggest Aria but the best eye candy is at The Cosmo. Go to Fremont Street either Friday or Saturday nite. Freak show.

thx for the suggestions all - we aren't super constrained, but a big draw for us to Mandalay is the Lazy river at the pool. sounds silly, but we enjoy them. we are looking forward to walking - and Ri Ra is definitely on my list to visit for sure.
that said, some really good suggestions - and Freemont is definitely on the list. since the wife ad I lost all the weight we have, were both gonna do Slotzilla Zip Line.
I really appreciate all the suggestions guys - she and I have been together for 12 years, 8 married by the time this trip rolls around and we never have had just a vacation together without other family members along.

Just a head's up, but I was there in February of last year and it was still a touch cool for the pool. We hung out at the pool a little, but the water was freezing so we didn't get in. Highs were upper 70's to low 80's and it got down into the low 50's at night.

If it's any consolation, there were people in the pool. I guess once you got in and got used to it, it was fine. It was certainly warm enough outside to get in, but the water hadn't yet warmed up. This was at the Bellagio pool.

gotcha - what's a little hypothermia anyway - ill make sure to do the Titanic tour before the pool - really get the full experience LOL

It's about 2 miles from center strip. I'd only plan on walking to things that are south strip like NYNY, MGM, Luxor, Excalibur and the Park area. After that, there's a whole lot of crap stuff you walk past to get to center strip.
Think of it like this...You're gambling, drinking, eating near the Bellagio fountains...when you are ready to leave, do you want to have a 30-40 minute walk to get back to your hotel? Just plan on cabs and Uber.

Ubers and Lyfts were cheap and plentiful when I was there, but that was before Covid. Like $5 from Bellagio to Fremont St cheap.

Most Vegas pools don't open till Spring Break or maybe in March just before. Even then, it's pretty cold. February is not a pool month at all.
I know you say looking forward to walking, but it's not an easy walk like in a park. It's like up this escaltor to cross the road...oops, it's not working so we have to take the one that goes across the street first, then avoid all the people, etc. It's not likely you will enjoy the walk as much as you think.
I agree with all the Mirage folks. I have been to Vegas a lot and find it to be one of my favorites. Besides it's location, a draw for me is that you don't have to walk a mile just to get to the street. It's a little smaller than some of the big properties.
Here's my list of suggestion for a first time visit (since it's your first time):
1. See Vegas from up high...High Roller, Foundation Room, Stratosphere. I like to stop at the Stratosphere and go to 107 Lounge for drinks just before sunset, during happy hour when I'm headed to Fremont. They have some good drink specials and the view is great. You get to go up to the bar for free and can go out on the observation deck. The High Roller is a lot of fun as well.
2. See the Bellagio Fountains and the Conservatory. These are still one of my favorite things in Vegas.
3. Walk the strip and go in the casinos. Drop a $20 or more here and there. Maybe do half one day and half the next.
4. Find a cool bar to have drinks. I like Rhumbar in the Mirage, the Chandelier Bar at the Cosmo and maybe play a little video poker there. You can get great drinks at that bar with the tickets from the VP machines. There are cool bars all over. Just pick a few. Petrossian at Bellagio is pretty cool for people watching.
5. Make reservations and have a nice dinner! So much to choose from.
6. Maybe not always possible now. See a show. A concert, a Cirque show, a play, any kind of show. Don't do it the same night as your dinner. Let each be the focus for that night.
7. Go to Fremont. See the lights under the canopy. Carry around a big arse drink. Go to The D and see the last of the Sigma Derby games. Go to the crappy El Cortez for the best black jack rules in town.
Eat, drink, be merry, gamble, whatever. It's Vegas, Baby!

I agree that walking from Point A to Point B can be annoying if it's a distance, but if you imbibe, eating a weed edible and just wandering around people watching is pretty fun. Step into the CVS across from Bellagio and buy a single beer to walk around with, and just giggle at all there is to see. Pop in and out of every casino along the way. Hit the Stagedoor Casino just off the strip behind Flamingo for $1 Mich Lights and video poker. I did that for 3 or 4 hours one afternoon and had a blast.

You can eat for cheap in Vegas if you don't have to eat every meal at a sit down, full service restaurant. There are plenty of counter service joints with some pretty good food. I understand y'all are traveling for a special occasion and would probably prefer a couple nights of sit down meals, but even then it's not absurdly expensive. There are plenty of options in the $50-60/head range without drinks.

well the upside is we would only likely be spending for 1 sit down meal a day, and no fast food - so the money we would spend would be for nice meals.
the walking wont be too bad as neither of us can drink much at all due to Diet - possibly will change by Feb, but who knows.
we wont be walking everywhere - we figure a Taxi/Uber will e used a bit.

Since you'll be on that end of the strip, check out Eataly for some counter service food that is not fast food. It's in Park MGM which is only a few blocks from Mandalay Bay. You can also catch a free tram from Park MGM that will take you from Park MGM all the way to the Bellagio with several other stops along the way. I would use that to get back and forth from the center of the strip to Mandalay Bay.
There's also a hidden pizza spot in the Cosmo that's fun to find, but you mentioned yall were on a diet so that may not work.
