Ireland is a lovely choice for a week. Usually RTs to Dublin are pretty cheap—among the cheapest Euro routes. It’s a very compact country, so you can cover lots of ground in a short time. No language barrier, friendly people, nice pub culture too. Excellent scenery, too.
Consider a coastal path walk, if you like the outdoors. Look up the Ring of Kerry and the Cliffs of Moher to get an idea of beautiful potential sights.
Ireland has many “country house hotels” and there is quite a bit of interesting local food and quality produce these days....it’s not all potatoes and cabbage.
Or, go back to Scotland and do the Highlands.....

No, seriously, your friends are both right and wrong.
Iceland is great for a 2-3 day trip (or stopover on your way to or from Europe) where you're just based out of Reykjavik, or it's awesome for a 9-12 day trip where you drive the Ring Road like I did and see most of the island. It's the 6-7 day trips that I think don't make as much sense.

I have been to 23 countries in Europe, and I enjoyed every one of them. It's really hard to go wrong.
If I were advising you, I would tell you to definitely take the time of year into account. Many countries in Northern Europe can be very cold well into April. I wouldn't visit those countries before May. On the other hand, Southern Europe can be just miserable in July and August.

Estonia/Latvia and Lithuania is a great trip. Fly into Helsinki and spend a few days there paying exorbitant prices then ferry to Estonia and pay dirt cheap prices the rest of the trip.

Yep. Here's a link to the Trip Report done with Romania included. Note we later did the Viking River Cruise "Eastern Passage" after that part of the trip.

One week? You mentioned Spain. A few years ago we spent a week in Barcelona and loved it.

We took a 14 day river cruise from Amsterdam to Budapest and really enjoyed it. Being able to discover a new location almost every day was a great experience and not have to unpack and repack every couple of days was the best. Traveling on the river was quite and peaceful with beautiful views. The cruise included a sightseeing trip at each stop & an optional one for a fee. Enjoyed the trip so much we are planning another one for December 2021.

That sounds about right either just do a little or go do it all. I still kick my self for not going 5 years ago before kids when flights were dirt cheap.

Here's another thought: Be flexible based upon airfare deals. I subscribe to FareDrop. Great service for finding pricing anomalies. You set your hub locations you'd fly out of and you get email notices. You can verify/book on Google Flights.
Recent Example:
Nashville round trips to Aruba dropped to $248 for some dates in January through February. These are the lowest fares we've seen recently, much lower than the average $500.

LINKOne of my favorite ways to spend a week in Europe is to stay at a villa in the Tuscan countryside. Specifically this place La Canonica di Cortine
I have stayed there twice, the last time being in April 2018. It is a beautiful complex of villas about half way between Florence and Siena. You will need a rental car, but it is the ideal base from which to explore the Tuscan hill towns.

I’m personally very partial to Switzerland. Love the outdoors and the mountains there are incredible. Highly recommend Zermatt.

My daughter taught in Spain a few years ago. LOVED the Basque Country. San Sebastian was her favorite. We spent two weeks visiting. Focused primarily on the Northwestern part. The Asturias Community is nothing short of spectacular. The Parque Nacional de Picos de Europa (National Park) is not to be missed. Spectacular. GREEN (unlike a lot of Spain!) We based in Cangas de Onís. Guide.
Spent a few days in Barcelona coming and going. Great airport. High speed trains. You could fly into San Sebastian. Spain is huge, so I'd say again concentrate on one or two areas and not try to travel so much each day.
