Headed to Japan in April...

...any must do experiences?
Lady friend and I with no kids. Active lifestyle and experienced travelers. We have decided on 4 days Tokyo, 3 days Kyoto, 2 days Hakone.
We have the transportation and some lodging set. Asking for unique experiences for those that have traveled.
We enjoy experiencing food/nightlife, history, hiking/outdoors. The lady has a Michelin Star restaurant picked out in Tokyo. That Robot Restaurant has me intrigued for a fun night out for dinner. That’s all we have planned for food in Tokyo.
How should we experience Mt. Fuji in Hakone? Kayak?Hiking? Recs on an Onsen Hotel in Hakone? We don’t have that booked yet.
Hotels in Kyoto? Areas to stay in Kyoto?
Any advice is welcomed. I believe in you Travel Board. TIA.

Tokyo -
You can find some really good cheap/hole-in-the-wall eats. Surprisingly the convenience store food isn't bad at all. I'd check out the gardens (Hamarikyu and Kyushiba are near each other). Imperial Palace is pretty neat. Odaiba has a great view of city lighting up in the evening.
Kyoto -it's been forever but you going to do a lot of the temples there? Most of my experience was walking them but absolutely worth it.

Stayed in a ryokan near the lake north of kyoto. There are many hotels in that area with traditional baths in the hotels, within about a half hour train ride to Kyoto staton.
Make sure to get the JR pass for the trains well before you leave. The pass works for bullet trains and lines within the major cities.

In Kyoto:
Ryoan-ji right when it opens
Fushimi-inari at sunset. It can be a hike to the top. We got to the top only to find it wasn't the top and there was still more to go.
Hike up to the temple at the top of Mt Kurama and then hike back down the other side of the mountain through Kibune
Eat weird shite at Nishiki Market
Nighttime bar hoping along Kiyamachi Dori
The sake district sounds good on paper, but meh, not the best.
We had an AirBnB just west of the Kiyomizu subway station. It made for a pretty decent central location. There wasn't really anything directly by it besides a cool bar and ramen place, but we were a quick train or bus from everything else.

My hotel was near here and really enjoyed walking through, but it was hot as hell when I was there.
I really enjoyed the Tsukiji fish market, but I believe that one is closed down now.

I can give other suggestions later, but for now I'll just say do not eat at the robot restaurant. Have a drink and watch the show but it's garbage food.

DiverCity shopping mall has a giant Univorn Gundam statue outside. It transforms every 30 minutes or so. At night they play a short movie and the night transformation is pretty neat. It's free so if you are in the area and interested in this short of thing.
There is also a large Gundam model store and museum in the mall.

I've written a post or two about my trip to Japan, I'll try to dig them up and paste them here for you.
We are leaving on the 9th for our second trip there, but this time we will be spending time in Kyoto, Nara, Osaka and Sado Island. We may do a day or two in Tokyo, but we did alot of Tokyo on our first trip so we wanted to explore some other parts of the country.
I'll drop you a few recs from the upcoming trip as soon as I have them

Maricar tour of Tokyo was a lot of fun, and a great way to see different parts of the city.
The MORI Digital Art Museum is really unique and fun to walk through. I'd recommend going early.
Hakushu Teppanyaki was my favorite place we ate. You have to make reservations, but it's amazing food in a small place run by a family.
