No one is consistent in how they refer to Germany. We call it Germany because of the Latin influence on the English language but even across the Romance languages there is variation (Alemania v Germanía).
That said, the answer to your question is because Germany doesn't care. Turkey evidently does.

I'm actually glad that didn't happen. While I recognize that the turkey is indeed a very intelligent animal, I've hunted turkey myself... and when the Toms are chasing hens, they're arguably the dumbest animals alive. I wish I still had the picture of that Jake standing on my boot while I was sitting under a tree and aiming at the Tom behind him that was trying to mount my decoy.

That's the official, internationally recognized name. The reasoning was clear: “Turkey” in English brings up the Thanksgiving bird in search results and branding. The government explicitly wanted to avoid that association when Americans were looking up new deep fryer recipes.
Easy To Confuse
Hope you handled it ok when Swaziland changed their name to Eswatini to avoid confusion with Switzerland in 2018? That one came out of left field and was subject to international debate for weeks. Believe there was even an O-T post on it.
Countries switching to the native spelling or a shorter, preferred form:
Czech Republic / Czechia (2016)
Cape Verde / Cabo Verde (2013)
Swaziland / Eswatini (2018)
Macedonia / North Macedonia (2019)
