Believe it or not, that actually is not it. The difference in the meats creates a different texture and the beef holds the seasonings better. In our tests we have used pork, beef, and various ratios of blends with the same fat saturation for consistency of cook and retention of size. Everything else is the same.
The all beef meatballs are better because they have a better texture and richer flavor. Hands down.

Use sirloin for your next all beef meatballs, and then a mix of pork shoulder and ribeye.

We did actually. And it was delicious. On the other I would have to check the type of pork to be sure, but I don't think we used pork shoulder and I know we didn't use ribeye.
