Even the judge is confused. How is a Walmart employee, fed ex driver, etc supposed to understand this crap?

Precisely. I know it's been a common practice in America for, who knows how long, but it's absurd. They overcharge in hopes of getting a conviction but also knowing they can just add lesser charges at the end of the trial to get a conviction on something.

The good thing for Rittenhouse is, the Prosecution can't appeal the verdict, whereas he can if found guilty.

"Perfect" self defense is very misleading and pigeon holes you into a specific set of a definition. Glad the judge is reversing that.

Pretty simple. If they find that he is not guilty by reason of self defense, for the a charged crime, they then do not need to deliberate on a lesser charge for that specific offense

It seems that the defense could have tweaked their questioning to cover those lesser charges had they been there since the beginning. Added after the fact, is there a chance the defense was unable to address those charges during the trial and, therefore, he’s found guilty when he wouldn’t have if those charges were there from the beginning?

This is not entirely accurate. He had an opportunity to object to certain lesser and includeds that his lawyers didn't object to. Him objecting would not necessarily have resulted in them being excluded by the judge. The judge had already weighed in on all of the ones which the defense objected to. Struck most of the ones they objected to and allowed others. Allowed the ones the defense did not object to. All Kyle had the opportunity to do was to insist on an objected to the ones his lawyer did not object to.
Otherwise, there would be no need for the judge to consider any of the lesser and includeds they argued about. Rittenhouse would have just objected if that were the case, playing a trump card and they would be dropped. That's not how it works.
