That entirely possible. Type 1 is generally juvenile onset diabetes - My MIL has it and has managed it through diet and exercise to reduce dependence on insulin. She’s probably the fittest person in the family.

Neither caused much damage.
During the first year of covid there was a young police officer, I think in Oklahoma, who ranted on social media about how his immune system was all he needed, and he would not take vaccines. He died of covid. The left paraded that example all around, just like you will with this poor woman.
The point is that the truth does not lie in anecdotes; it lies in statistics derived from the massive data we’ve accumulated. That data shows that the vaccines did more good than harm but were mainly a disappointment. The statistics also show that covid, while a real tragedy, was way overblown by self-serving governments that wanted more power.

Fit, maybe (depends on what you mean) and active, sure. Fit and active for a person living with Type 1, even more so. But if you have Type 1 AND some autoimmune disease you are not healthy. You may be relatively healthy.
