Notify him via a letter that his cows have repeatedly broken through the fence via official notice. All cost associated with his cows entering your property will be invoiced to him: fence repair, crop loss, transport, and property destruction. Notify him the cows will be transported to the appropriate authorities at his expense. Should the cows return or invoices not be paid the authorities will be notified. Upon the third time the authorities are notified a lawsuit will be filed. This way he is on notice and if he negligently does nothing a case is built against him.

How, exactly, will this go down? You’re advising him to say he will sell the cattle but buy the meat? In essence, he will buy the cow?

From reading this post, you've been more than accommodating.
If his place is in that poor of condition, nothing will keep the cows from tearing into yours.....just short of a new 6' net wire fence. Cows are creatures of habit and will continue to tear in.....
From your description of his land...he's not about to pay $4-5/ft to build a new fence.
Your local sale barn likely has guys that will come out and catch the cattle then haul back to the auction to be sold.

Can you run them into the next place over? At that point he might get the idea getting them back is more effort than fixing the fence. On another note Here in Texas you can forego having animals for a few years in bad conditions to allow your place to recover and not lose exemption. Might be worth suggesting to him.

I can tell you how to kill each one and he will never claim a single one was his.
Run into a cow wide open with your truck, he will say it’s not his cow and he don’t recognize it.
Repeat until the herd is gone or he fixes the fence !!!

I had this same situation. The cattle owner wasn't properly feeding his cows, so they broke out and got in my food plots. After several conversations with the cattle owner, the problem continued. Next step was to contact the Sheriff, within a few days the cows were sold. I think the owner of the land told the owner of the cattle (the land was leased) to get off his property.
Below is summary of the laws in the 'Sip, no you can't shoot them or take them to sale. Start with the Sheriff first. You can charge the cattle owner $8-$10/day per cow.
