Need some squirrel recipes

My daughter is wanting to do some squirrel hunting today and I’m looking for some different ways to prepare them.
What are your favorite recipes? We always fried them or went the gumbo route.

Pressure cook them and then fry them up. Make some milk gravy with the drippings...simmer in the gravy...man that is good stuff.

I marinated and grilled one the other day, tasted just like dark chicken meat.
Not a lot of meat on them but you can do just about anything with squirrel you can with skinless chicken.

Was thinking about doing a bacon wrap on the grill and throwing in a sliver of jalapeño or ghost pepper with it.

I like to brown the pieces in a pan first, then add cut up onions, bell peppers, garlic and seasoning. Keep covered on a low fire. Add a little water every now and then to make a gravy. Cook until tender, usually a couple hours. Could also use a black iron pot in the oven. Can’t go wrong as long as you keep a little water in the bottom. Can do rabbit the same way. I like it served next to a pile of white beans and rice, with a hunk of cornbread on the side.

Brown gravy.
Season the squirrel and marinate in the fridge preferably over night but you don't have to.
Brown them awhile until they're dark
Add chopped onions and bell pepper and garlic. Sweat those down and brown them.
Add water, you should have a dark brown gravy. Add a can of golden mushroom and stir it good until it's blended.
Cover and simmer until the squirrel is tender
Serve over rice. Enjoy.
It's some of the best wild game in a gravy.

Buddies son was farting around at the camp last year and tried to grill one over an open flame,,, if you or your kids have the jaws of a bull dog and some snaggled sharp teeth y’all may like them like that.
If not try them smothered in a black iron pot.

Light seasoning and out on the bbq pit or smoker. When med rare, put on top a plate of white beans.

I fry them till half done then cook them down in gravy. I eat them with black eyed peas as a side

2nd this. I've never been able to grill them without them turning into shoe leather. Fried and smothered is also my favorite.

Overcooking them. Similar thing to duck and venison. Gotta be careful for sure. But any meat that’s like shoe leather is generally just over cooked and by a lot. Now, it’s certainly not chicken breast either, I mean I’m not saying it’s tender to start. But I don’t think it’s that far from frog legs or a chicken wing or something similar as far as texture. Given that, I like to eat meat off a bone so it doesn’t bother me either.
Now I’m not saying everyone is missing out by not grilling by any means, probably better ways to cook squirrel. But I do think it’s a pretty bland meat that has a lot more potential options then the normal 3-4 methods.

Quarter out the squirrel, lightly bread it and fry it, toss in Buffalo sauce. It’s good for multiple eaters
