After shooting somewhere around 30k rounds through a pistol, shotgun, and AR. I am definitely the most accurate with my AR. A person also has the ability to add a light, laser, lpvo, red dot, 3 point sling, and ect. And if they wanted they can all the above at once

It's just easiest for beginners. Could move into anything eventually but starting with yh wrong weapon could end the whole thing before you even begin. The opposite and of the spectrum would be a small revolver. It's literally the hardest one to shoot accurately out of most of the things we're talking about. The super light ones are even worse for a woman.

My personal HD long gun choice is the ol' 12ga pump. Big hole in bad guy, but hopefully not much else.

My wife shoots my Taurus G2C in 9mm better than the S&W Shield EZ 380 I bought for her. That 380 is a good shooter and the slide is truly EZ.

I agree that you should go to the range and try out some of the guns they have for rent.
For the Wife
In the past 3 - 4 years I purchased a 9mm S&W M&P EZ for my wife, and a hammerless S&W .38 caliber snub for my daughter. They were purchased with the intention to purse/car carry.
For the Home
I would recommend a 12 ga. shotgun, like a Mossberg 500 tactical OR you can purchase a 9mm handgun along with a MCK kit that transforms it into a shoulder stabilized, more accurate handgun (look into this option).
For the Wife
In the past 3 - 4 years I purchased a 9mm S&W M&P EZ for my wife, and a hammerless S&W .38 caliber snub for my daughter. They were purchased with the intention to purse/car carry.

The Warden (no pics) is 4'-11" and doesn't like the S&W Airweight I initially bought for her. She can't rack my other pistols. Haven't tried an EZ yet.
She absolutely loves my little Colt .22 SA 3/4 size cowboy gun, though.

Home defense?
I recommend the Judge. It shoots either 45 long colt or .410 shotgun shells. The .410 self defense rounds are mean. And your wife can easily handle it.
Also, I’m a Glock guy as well. For home defense, either a Glock 21 .45 caliber or a Glock 19, which can also be carried on your person if needed.

If you’re looking at an AR platform, I highly recommend an AR pistol in 300 blackout. They make some mean self defense rounds for this as well.

FBI statistics show that 95%( or higher. Can’t remember exactly) of all self defense and officer related shootings fall in the 3-5 rule. 3-5 shifts. 3-5 feet. In 3-5 seconds. And involve physical contact with the suspect. Muzzle contact with a semi auto at best can cause a malfunction after the first round cycle. At worst it causes a stove pipe on the chambered round.
Which is why we were encouraged to tote a revolver.

Bought my wife smith and wesson 38 special ladysmith with built in laser sight. Weighs 14 Oz hammer less. Great weapon for women.

Well I see you list your pronouns, I hope your kidding, the P-365 is excellent. Make sure to get a MOS cut even if you do not plan initially to use a Red dot, its cheaper to buy one cut than to have it cut after the fact.

I haven’t read every post in here so if this is repeat info, my apologies.
You and your fiance would be best off finding a range where you can handle and shoot a variety of different guns to see what fits you both best before dropping $$$ on a gun only to find you can't shoot it well or it doesn't fit your hand well.
There are so many options these days that fit the bill home defense.
It's all about what fits you and what you can shoot the best. You may like the fit and feel of a Glock and shoot it well but it may not fit your fiancé's hands well.
Glock, S&W, Springfield, FN, Canik... And there's more but you usually can't go wrong with any of those.

Are you dead set on just getting a handgun?
S&W M&P Shield Plus or a Glock 43X are good options if you're interested in concealed carry. If it's just gonna stay at home/be a nightstand gun then just keep it simple and get a Gen 5 Glock 19. And then use a solid 124gr HP like Gold Dot or Federal HST.
Gen 5 Glock 19 will probably be around $540 plus sales tax. The S&W alternative (M&P 2.0 Compact) will probably be around $500. Can't go wrong either way.
If you also want a light then the Streamlight TLR1 will suffice ($150-$160). You don't need a Surefire X300 ($300+) if it's just gonna stay at home.

The typical AR15 round (55gr FMJ) actually has a lower chance of overpenetrating compared to 9mm and 00. Even drywall will cause it to fragment and tumble.
