On the barge rig I was working on last month, someone came back from their days off with pounds and pounds of gar meat he caught..both fillets and gar balls. He put the gar balls and some fillets in a stew and fried the other fillets. It was different for sure.

On a big gar (>30 lbs) take and cut that tenderloin across the back, making big roasts with the backbone in the middle. Cook in a pot with onions like a pork roast. Better than sex.
