1/4 stick butter
Heaping tablespoon flour
Make a slightly darker than blonde roux lighter than paper bag but darker than manilla envelope
Dump 2 cans LaSuer Peas in the pot and cook for about 20-30 minutes. We eat that about 3 times a month at our house, goes real good with some smothered down gravy steaks.


ETA: Sometimes if i have time I'll add a finely diced shallot, only if I have enough to cook it down enough so my daughter doesnt see it. She thinks she doesnt like onions.

Do you have a smoker?

All tasso is smoked pork, a lot of people use pork shoulder to make it. Pretty easy to make.

Slice a pork butt into half in steaks,,, season one side with Tony’s. Flip and season the other side with cayenne pepper.
Smoke for about 8-10 beers or until the meat is no longer sweating, should bend over and almost break.

Not sure I don’t have enough years of drinking the to have it calibrated yet. They go down a lot faster than beer.
That white bean Tasso soup looked like something I may try pretty soon. Watched both episodes solid show not the same shoot up and advertise a product even though they pimping the OBs fav yeti!!

Father in law has one. I'll shoot some wild hogs here this year. I'll smoke some for this next time. Made it with Sweet Itialian Deer sausage I had made. It was awesome. Seriously one of the best soups i've ever had.

Can't wait to do the duck Canard à l'orange with some Mallard, Widgeon and Gadwalls from my Oklahoma trip this season.

St. Mary parish. Used to be some awesome beer head killing there. It all started changing. I hunted Grand Chenier for years in college and after. Some of the best times I’ve ever had were in Louisiana swamps, duck hunting, camping and cooking. Have a great night brother.
