I catch a lot of these but give away 90% of my filets.
I'm all about the white meat.

I do really like a grilled salmon filet but raw salmon sushi is what pushed it from a mid tier fish to top 3 for me. I love me some salmon sushi.
ETA: I'll also say that another bonus for salmon is that incredibly versatile. It's great grilled and fantastic raw, but also makes a good jerky and is excellent cold smoked. Sure there are a zillion recipes you can do with a white flesh fish, let's say a sac at lait for example. But all those sac au lait recipes have more or less the same taste and texture of the fish flesh itself. The texture is always fantastic but it just tastes like whatever you cook it with.

I see where you're coming from now. Salmon is my favorite for sushi. Any other way is meh....
Now....if only I could learn how to prepare the fish like they do and I'd be up to my ears in salmon sushi.
CSB....told my nephew the first salmon I catch in my boat I'm taking a raw bite out if it.
Did it after I filleting, yeah....its not even close to the same

I will say that fried choupique is pretty tasty, but you have to know how to do it or you're going to have a mess on your hands. Def can't freeze that
Yes you can. Dredge the pieces in your favorite fish fry and freeze them on a baking sheet with wax paper. Once frozen put them in a ziploc or vacuum seal.
You can fry them like chicken nuggets baw. Also the balls will freeze good too.
