Looking for a nice chef’s knife in the $150-200 range. Any recommendations?

I have several. Most are Shun and they’re great.

My newest is my favorite for chopping. The brand is Miyabi. The weight feels perfect.

I recently bought a few of the Dexter Russel 8" chef knives and couple 8" filet knives. Great knives especially for the price.

Totally agree. Someone bought me a Dexter Russel Chef's knife about 6 years ago now and it is my go-to for fine chopping, mincing, dicing, slicing. Sharpens easily and holds a good edge once sharp.

I have a set of Miyabi Fusion kitchen knives. Once you've used a quality knife honed on a proper Japanese waterstone set you'll never want to use less.

My dad gave one just like this at least 20 years ago. By for my favorite.
Tried several makes and models varying in price range.
Always go back to the Dexter Russel.

I have the Shun knives and really like them. I send them to Kershaw once per year for the free sharpening and they come back sharp as a razor. I think they are owned by the KAI group which owns Kershaw and Zero Tolerance.

I agree. My wusthoff knife set has been pretty spectacular. I’ve had it for over a year now and with only honing once a weekish it still remains hair shaving sharp.

I’ll wait to send it back to be sharpened till I can’t hone it to shave.

Dexter Russell iCut Pro is all I use and probably all I will ever use. Great knives, especially for the price.

I have Dexter,Kershaw,Wusthoff. Just got a set of Shuns. I didn't think anyone made another set of knives that were noticeably better in feel, weight,and sharpness than Wusthoff but damn was I ever wrong.

Go here... buy a real Japanese knife. There are plenty in that price range that are much better than “store” brands. Also, find a way to sharpen your own knives on here as well. Tons of info on this site in the forums.

That being said... most of if not all of these aren’t a German steel knife, which means they aren’t made for cutting bone and stuff.

Sounds like he wants to splurge on a nice knife.

I have a set from J.A. Henkels. They are alright but nothing special.

I really like Misen and Global knives. If I had to do it over again I'd piece together a set from those. If you are in the NOLA area it may be worth a stop at Coutelier if you are interested in Japanese steel.
