What's the best method to get rid of these critters?
Is it legal to shoot them at night with a scope?

I made some good money in the summertime as a kid shooting armadillos for the neighbors at night

I think all is well if you get there by morning.

I don't see any reason for folks complaining if you kill them at night. If you dispose of them and not just let them stink up the area with rotting corpses, who's going to care.
Just make sure of your shot and what's past it to not hit anyone's house, vehicle or pets.

Eliminate their food source by treating your lawn for grub worms etc.

Trapped 3 so far this summer
Shot them & threw them in garbage can
Pretty sure all 3 were on garbage day

Yesterday early morning, I walked out on the patio with my dog. Sure as shite, a big arse armadillo was close by. Dog attacked, diller got away, ran right at me. Knock over a few potted plants, just about knocking me off my feet and then knocked over a fan.
Bad thing, when it hit my ankle, it cut it. I did clean it and put meds on it. Today, all that area about 3" round is deep red.
The good side, later that morning my pup caught and killed that sucker.

I'm actually a pretty big fan of yellow. I'd rethink your strategy.

Wear gloves and make sure you cook the meat all the way and you'll be fine. Ha!
Years ago I ran across a family with two small boys around 10 y/o and they were killing armadillos on the Atchafalaya River levee near Krotz Springs. I was doing research on, you guessed it, leprosy and we were tagging armadillos out there. The grad student working with me was from Connecticut and he couldn't believe what he was seeing. Welcome to South Louisiana.

thanks everybody....my idea is a ruger 10-22 takedown with isb and a night vision scope...saw a guy on YouTube shooting rabbits this way.
