I now see thats the answer, I just dont see why. I was under the impression angular momentum is always preserved.

It is, but that's a different thing. Angular momentum is what keeps things spinning. A force (in this case gravity and in the bells case the string tension) is needed to keep an object orbiting something else.

The ball in your scenario is still impacted by gravity. The earth would not experience that force if the sun vanished.
I wonder what would happen to the moon. I assume it is affected by the sun's gravitational force in addition the earth's. Surely it wouldn't continue its same path around the earth.

I dont think so, gravity would instantly go away when the sun went away. The light and heat are physical things that are traveling and take a finite time to span the distance. I don't think you can have residual gravity or anything.
I don't really understand gravity though so I could be wrong. Using the analogy above, I think itd be like cutting the string.
