Same reason mayo should not touch meat or cheese and even why we aerate water/carbonate beer. It’s all about aeration and taste.
Top to bottom: bread - condiments - veggies - cheese - meat - bread.

Never really got the point of cutting them. I always just start with the crust and eat that all the way around then get into the other part.

After the diagonal slice, spear an olive with a toothpick, and then jab that into the bread. Then you have a perfect cartoon sandwich.
