I only have one vest (a J Crew one) that I would wear on the weekends. I could wear that vest, a long sleeve shirt, and a scarf on the weekends up until a couple of weeks ago when the really cold weather set in.

I get what you're saying, but if it's cold enough outside for your core warmth to be an issue, it's too cold for a vest anyway.

At the end of the day a vest is a practical solution for someone who needs to keep their arms free while wearing the vest. The whole warmth argument is futile.

Get a good down vest or a windproof/waterproof vest and you can wear it when the weather is in the 40s and stay warm easily with just a long sleeve shirt underneath.

plus a vest looks better than most casual jackets and its not as bulky and easier to take off.
And when its really cold it is better for layering.

Not sure where you live, but as someone who lives somewhere where it gets pretty cold, I disagree.

which is why vests are perfect most of the time

I don't feel the need to take them on and off all the time

I can wear them when it super cold outside for a bit and keep them on in the office and be comfortable the entire time

super versatile
