It is a sign of respect to show them they are important enough for you to stand when they show up.
It makes them feel important and men have always done things like that for women to impress/court them. I guess it also allowed men in suits to stand and adjust their jacket and look better when she arrives and leaves.
Probably also a sign of men meeting a woman at eye level when she approaches. You do the same if you're meeting someone for a business lunch/dinner to shake their hand.

I am over 60 and we were taught to stand when a woman entered or exited a room and when she left the table or returned. Today it is unnecessary and some feminists consider it offensive. As my grandmother used to say women came off their pedestals to be equal to men
