I put tomatoes in my gumbo if they’re around. None of my gumbos look the same. My (and your) grandparents would prob laugh at you jumping on this trend of collapsing gumbo to your particular ingredient list.

Gumbo is not and should not be something your need all your special ingredients for

Oh my God. There is definitely a wrong way. Almost every Crawfish boil that I’ve been to by someone from Lafayette boils the frick out of them and they fall apart when you try to peel them.

Nowadays, I always inquire as to who is boiling them and where they are from because It’s so bad I just quit going if it is someone from Lafayette.

It is because so many people don’t know how to boil Crawfish correctly that people think that that’s the way it is.

And no one wants to say someone’s Crawfish is crap. I certainly don’t say it to them. Everybody thinks they boil the best Crawfish because of all the garbage they put in the boil to cover up the fact that their Crawfish are crap.

Including my best friend and I never said a thing I just don’t go anymore.

Those that think dusting is the way, riddle me this:

If you like to use marinade to flavor a steak, do you think it’s better to soak it first and then grill or grill then soak it?

I would dare say almost 100% of you would say soak then grill and the other way would be dumb.

It’s an objectively terrible way to cook them. I don’t really care if you want to ruin them for yourself. But just don’t invite anyone else unless you’ve warned them first.

I actually left from a crawfish boil because the person boiling them dusted their crawfish.

To be fair, it was something I wasn't thrilled about attending in the first place and the crawfish was scheduled to be ready by a certain time, but they ended up not being ready until over 2 hours later and people were starting to get grumpy, etc.

It was set up so that you grab a tray, go get the tray filled with crawfish, go eat at a table. I wanted to taste one before I went get a tray full of them and it was like where I was chewing it, in my mouth, there was no flavor, but in the back of my mouth I could taste a slight salt taste. It was disappointing, but I wasn't dead set on getting them so no big deal...

Then I overhead the dude who boiled them telling someone (who was having crawfish for the first time) "what I do is, I wait until after they are boiled to add my seasoning. I do it as soon as I take them out.. I pour them on the table...." he would put them on the table, season them.. Boil the onions, potatoes, etc in what he called "flavored water". That's when he added seasoning.. to boil the sides and he told the guy how that then adds more seasoning to the crawfish. I just thought "I am hungry, I am not eating those crawfish.. I am out". I don't get offended, I just think its really stupid.
