Nashville is good!

Houston isn't the South. I like Texas and think it has a lot in common with us, and in truth we're probably going to blend over time. But you're in the minority here.
The census bureau defines Texas as part of The South.
Who are you to question the motherfrickin census bureau????
TBH I can't believe they classify OK & DE as The South

Delaware?
They weren't even part of the south during the Confederacy.
Really there are plenty of good answers here.
Charleston
Savannah
Montgomery
Birmingham
New Orleans
Mobile

Maybe they'd be in the next group, with Jackson, Baton Rouge, Pensacola, Shreveport, Gulfport, and a few others.

While not my preference, Atlanta is an epicenter of rap. Of course, it has played a significant role in R&B, soul, gospel, country, etc. as well.

Reasonable choices would be: (in no order)
Charlotte
Atlanta
Miami
Nashville
New Orleans

Nashville
New Orleans

WHY NOT??????? It's already the capital of Bama football, reefing decisions, SEC fixes, and the sort.

Well, it was Richmond, officially, but these days, I would say Atlanta or Nashville. Those are the two most important cities in the South both economically and culturally. If New Orleans was more populated and had a better economy, it would be a contender, but alas...'tis an eternal dumpster fire.
Miami doesn't count because it is not culturally southern at all. It is a mix of retirees from New York and New Jersey mixed with Puerto Ricans and Cuban ex-pats.
As for unique cuisines, Atlanta is the home of Coca-Cola, and the birth place of both Chik-fil-a and chicken & waffles.

What "South" are you talking about?
The Old South? Might as well start where it ended - Danville, VA. Take a vote from there.
The New South? Atlanta
The Deep South? Meridian
The Gulf South? New Orleans
