If your medieval protection needs can wait till the fall then go to the Texas Renn Fest in Plantersville Tx. (North of Houston)
There are tons of shops there that can get you fully outfitted. Just a warning they won't allow you to bring your sharpened sword to the faire. Only blunt ones are allowed. Otherwise you can purchase a full suit there but its not cheap.

I’ll definitely assembling this in stages. Kind of like Mandalorian and his beskar armor. The journey will be part of the final build.

If you buy one there though, it may be sharp (but you have to keep it sheathed as long as you are there).
