8 hours will get you to the Ozarks or the TX Hill Country, which is not mountainish but still pretty nice.

For $73 a person you can fly non-stop RT MSY to DEN and all the mountains you can handle on Saturday Jan 30 returning Monday Feb 1.

Frederickburg, New Braunfels, Kerrville, Boerne. There's a Hill Country craft beer trail that looks pretty interesting. LINK

Those are pretty good, but you can get much more rural w bigger hills:
Utopia, Vanderpool, Leakey, Concan, Camp Wood, Barksdale...

Spectacular

Hot Springs, Lake Hamilton, or Lake Ouachita for Ouachita forest and mountains. Eureka Springs for Ozarks and gays.

You can get to Toledo Bend round trip in much less than 8 hours and it is just as foresty and nearly as mountainous as any other options suggested in this thread.

You can rent Bobby Hebert's "camp" if you'd like.

I think I am going to go with Hot Springs. There are some badass pictures of the park.

The state parks in Arkansas are great as well. I've personally been to Mt. Magaizine and the views are awesome. You can get a cabin or stay in the lodge.

Yep. I always try to make the best out of my work trips there. If anyone does end up going to Mt. Magazine, it's the highest point in Arkansas, try to find my name in the book at the summit.
