My pillow is almost 20 years old. I have tried so many times to replace it, but I can't ever find anything that is the perfect thickness and firmness. That pillow has seen some shite.

Not flat, but I've used a Sobakawa Buckwheat Pillow for years, and I love it. It's contours to your head for a fine nights sleep. Added feature is it keeps you head cool.

Most of them have the firmness listed on the pillow. Just look for the softest in that line. Also pillows listed as good for stomach sleepers are generally soft as well. I’m a stomach sleeper so I hate firm pillows because they mess up my neck
I have one pillow just for sleeping on my bed. A few bucks at Walmart, I don’t even touch my nicer pillows. It will also get softer as you go. Hell after about a week the pillow was taking up about half the pillow case it previously was

COOP brand on Amazon. It has a zipper and you can add or remove the stuffing that comes with it until the desired firmness.

This My Pillow variant.
I just bought one, and it's not "puffy," which is what I think you're trying to avoid. I don't like the pillows that "bury" my nose in material when I'm on my side, which is probably something like what you're trying to avoid.

I'm a stomach sleeper, so prefer a flat. I use a Casper I bought at Target. It's a foam core inside of down (or alternative).

Go spend one night at a Holiday Inn Express. Great pillows. Complimented them on them and they sold me two for $10 each.

Have you tried getting a regular polyfill or feather pillow and just taking the stuffing out until it's the way you like?
