It has less to do with frequency and more to do with an addictive predisposition for "needing" alcohol.

Someone who is thinking about drinking all the time, even when they're sober. He/she may talk about it a lot or not, but regular activities revolve around drinking. For example, they might cancel plans once they find out no alcohol is there, even if it's not something where alcohol would normally be.

Someone whose body is dependent on alcohol

When the alcohol puts anything negative into your life that's when you become and alcoholic

No Easter Sunrise service for me. No mimosas, no care.

got the idea from the court ordered AA meetings I had to go to back in the day.
someone would have to read a card or something before the meeting started and they would use the word unmanageable.
just the first thing I thought of.
I like Roger's answer. When you get sick because you aint drinking.
like when Roy Munson was barfing on Kingpin. Ishmael asked him if he's been drinking and says, "I only puke when I'm not drinking"

I have known lots of functioning alcoholics.

LE, ive had drinks twice since before Mardi gras and once it was only a cup of wine and a cup of beer at the IRish Channel parade and if I were decide to get drunk one night there is a 50/50 chance that it may be all by myself. I sometimes like drinking and relaxing by myself and possibly getting a good "buzz". I don't think that makes me an alcoholic by any stretch

Fact
I'd have to drink several beers or a half pint of liquor when I woke up to keep from getting sick.
Alcoholics plan all their events around alcohol, will spend their last dime on the stuff even it it means being homeless, may not remember what day it is, or where they are, but can tell you where every bottle they have hidden is located.

According to the experts, an alcoholic is someone who drinks like a beer every couple days, and binge drinking is having two drinks in the same weekend.

Yeah, I think it's a difficult thing to pin point.
The simplest thing is just to say dependency. A lot of people lie to themselves about what exactly that means though.
