Won't ever go back to a double-basin sink. I hand wash most my dishes and don't ever see a need to let dishes soak in a disgusting sink full of a food/water mix.

As far as letting meat thaw I just grab a mixing bowl and let it thaw in that. Wouldn't want bare food sitting in a sink no matter how clean I thought it was.

Mine can handle baking sheets and large stockpots and frying pans just fine. Maybe poors can't afford decent sinks and get low-rent single basin sinks to make up for that fact. Being able to pre-rinse into one basin that has the disposal while having a separate basin of hot soapy water is how most civilized people handle the task. Also all commercial kitchens.

I have a single sink (farmhouse style) in kitchen but a double bowl stainless one in the pantry. Next to the second DW and deep freeze.

I guess that is my first world problem of the day.

Well, she's not getting her way on it so she's wrong on that. The parts I give a shite about are being done per my specs. She can have a single sink in the scullery.

With a 2 basin sink, I always get confused about which side is clean and which is dirty. I don’t want to accidentally pee in the clean side of the sink.

With a 1 basin - I can just pee without the Russian roulette racking my brain.

Yea I’m absolutely NOT trying to do what your average commercial kitchen does as far as cleanliness.

When we built our camp in '08 my wife went alone to pick out all the plumbing fixtures and bought a 45" enameled cast iron single bowl sink with an interchangeable cutting board/drying rack and a removable grated rack in the bottom. At first, I thought it was going to be a PITA but figured it was a camp and I could just live with it. Within 6 months we were switching out the one at home with a similar sink. I would never go back to a double bowl unless one of them was close to the same size as these single bowls.

If they insist on large single sinks, then design them with a drain to one side, and a faucet that swings to cover the entire area

That way you can stack or defrost on one side, and still use the other

I dont defrost in water. I use an available sink rather than a counter, and can simply rinse any juices down the sink

they did that in the house we just bought - eventually i'll replace it and put in a disposal
