I usually want until around 10 because most of the yard is getting full sun and dry, plus pushing a mower for 80 minutes helps to sweat the alcohol off from Friday night.

8 is too early. Wait until the dew burns off so you don’t clog your mower housing and let your neighbors sleep in. 9:30-10:00 is the acceptable start time.

The relative humidity is also higher in the morning, so your body doesn't cool off as effectively. The other side is you don't want the sun at it's highest angle when you're mowing either. Puts 9:30-10:00 as the sweet spot when the dew is basically gone, relative humidity is a little lower, and the sun isn't completely roasting you.
Though the sun thing is more of a consideration in July vs late August.

Yep, because you can either cut at 6am or 11am. The five hour span in between doesn't exist.
