LOL. And it’s been stripped or wrecked.
My only car theft was a little sporty Honda Civic 20 years ago. I was trying to sell the damn thing so it wasn’t a horrible deal. They found the car 35 days later in the East. There were a few kids shirts with family reunion stuff on it and two empty cereal bowls.
The thieves were professionals because all they stole were two air bags and one other part. Those were big money items.
It worked out because insurance gave me a nice check for more than I was trying to sell the car for.

Called guest relations and filed a formal complaint to corporate with a claim number. Said to expect response in 5 business days.
Also sent emails to a few people.
At this point I’m just trying to be really annoying to them every day until it’s made right. Yes I have a rental car but the whole situation is inconvenient because someone from the Valet team/hotel let this happen. If my key had been recovered I’d take my licks. But the key not being recovered and truck being taken within 30 mins of parking indicates it was an inside deal

Yes, and remember that on the valet ticket it likely says they are not respsonsible...except for their own negligence.
No matter what they say, they can't force you to waive their own negligence.
Make sure they know YOU know that. They took the key. They gave it to someone else either negligently or intentionally.
If one of their employees was involved, then they have Negligent Hiring Practices at the very least.

How they steal cars without a key
I know you said you think it was inside job with the key not being recovered, but they don't need a key on gm and some dodge vehicles.
Most thefts I see are newer model GMC Sierra and camaros. They are in and out with the vehicle in less than 5 minutes.

I get that but the VALET stand could not recover the key when I turned in my ticket. That can only mean one thing

Wild twist. The Valet claims department called me this morning and said they have found the key this morning. They couldn’t find it anywhere when looking through their locker on Sunday

ETA: I have a job interview in NOLA this week. Gonna have to remember to clean out my truck before I go.

You must be a really nice guy because I wouldn't be accepting that as an answer. That answer matters for this current scenario.
You need to use words like "accessory after the fact" and not just accept that response from them.

If the Westin or NOPD gave even half a damn, then this case is 99% solved.
Were the person or persons that found the key the same employee(s) working at the time the truck was stolen?
A large and busy hotel like the Westin runs a large number of valet attendants throughout the day and night across multiple shifts. The truck was stolen during a small window one evening, and the key was miraculously found on another day. Only a small number of valets would have been present on both occasions.
