I've owned two (but I live in snow country). Good cars, low maintenance, practical.

I like women and identify as lesbian some days. Stereotypes aside, it is a good vehicle for what it is built to do. Don’t get the lesser models if you truly want the outdoor usage. Mileage could be better but that’s why it falls in between other wagons and SUVs.

The new turbo 4 models are faster and more fuel efficient. They've basically put the 2.4L turbo from the bigger Ascent into the Outback. It makes the Subaru Outback turbo the fastest car in it's class now.

Yeah. They are not complicated cars by any stretch.
ETA: The complaints about the new Outback are around how their infotainment screen works. That may make the case for finding last year's model if you can.

My opinion is probably my heavily influenced by the crazy old white woman who lives on the corner next to the entrance of our neighborhood. House decorated like it’s the 70’s, she wears mom jeans up past her belly button, calls the cops on anyone walking their dog in the neighborhood, and has her ancient security cameras all pointed at her Biden/Harris 2020 signs in the front yard.
And parked in the driveway? You guessed it.
Littered with camping stickers from every liberal politician that’s ran for anything in this part of Texas since 2016. Including a BETO sticker

GF bought 2019 a year ago. so far no issues. great practical car. does everything you described which is the same reasons she got it. we can pack up all our camping / outdoor gear, dog loves riding in the back, easy driving, comfortable ride, gets 27 mpg doing 85.

Basically the reason I bought a 2012 Outback in 2015. With AWD it makes it easy to pull my boat up the ramp, AWD is good for the sand roads around here, and my sand driveway. Kayak goes in the back easily, or on top. Sleeping in it is legit when doing a roadtrip, screw setting up a tent. Reliability is important to me. I'll be buying another Outback in a few years. You have to be really insecure to GAF about the perceived politics of a Subaru driver.

If practicality is what you're looking for, you should look at the Honda Ridgeline. You get the functionality of a pickup and all the other qualities of a minivan.
