If you are parking factor in what it cost to park at your hotel, assuming money is some sort of consideration. Some places are an extra $50/night in the quarter and CBD.
Warehouse district will be minimal in surrounding lots and free to park on the streets from Saturday night at 7 to Monday at 7am.

where would be a better place to stay for tourists, the french quarter or down town?
Downtown is right next to the french quarter. It's nicer to stay in the quarter, but can be less convenient due to parking issues and trying to get in/out of the quarter which can be a real mess.
Downtown is more convenient for getting in/out and only requires a short walk to reach restaurants and sites in the quarter, especially if your hotel is on or near Canal Street. New Orleans as a whole is very tourist friendly due to the streetcars and the compact nature of the town. Most anything you'd want to see is within walking/biking distance of downtown/the french quarter and/or a streetcar stop.
The biggest issue with this trip will be:
A. finding a place to park in Baton Rouge before the game
B. Navigating this year's wacky post-game contra-flow traffic plan (which will inevitably be different every game for no good reason) to get back to New Orleans.
Other than that, you should have no problem finding a nice, convenient hotel to stay at in New Orleans surrounded by art, architecture, sights, and incredible food. I would definitely hit up the food board for restaurant recommendations before you go to avoid tourist traps and average meals in a city filled with absolutely incredible experiences. There's no reason to settle for less than remarkable food if you can afford it. Even the cheap stuff can be pretty damn delicious if you know where to look.

Air B&B something Uptown between St Charles and Magazine

I would be more worried about the gigantic cesspool that Baton Rouge is.

All of this depends on whether you will have a vehicle or not, also....

Royal Sonesta. You’re welcome. Can’t do much hanging out in CBD.

Make sure you remember where you got your shoes. Bring receipts.

Royal Sonesta on Bourbon. Rick’s is directly across the street. Your wife will have the flying shits from the rich food so you will have time to make it rain while she’s become best friends with john.

Not from NOLA but I've always liked those old hotels off Jackson Square. The Maison duPuy(?) and Place De Arms(?) and I think there's another one. A 150 year old building is gonna have creaks and smells but I'll take the history and character over cookie cutter modernity.
(Haven't stayed at either since Katrina. Could have gone further downhill.)

where would be a better place to stay for tourists, the french quarter or down town? we are looking for things to do in walking distance, restaurants, bars etc.
#2: Stay in the French Quarter and then stay in the French Quarter.
Exploring on foot from the French Quarter at night can end badly.

I 2nd the Warehouse District. Out of the fray of the FQ with only a 10 min walk/$5 Uber to it. Plus your a very short distance to the LGD and Uptown.

Be ready to spend some dough on those ubers. Surge pricing after games is akin to highway robbery.

Stay strapped and keep your head on a swivel. New Orleans is the crotch pit of the south.

Warehouse District is where I’d stay, maybe Renaissance Arts.

Location wise I don't think you can be the Monteleone.

Stay at LaPavillon on Poydras.

Start your night on Bourbon Street. Drink a bunch(~10 or so) of those hand grenades (they're not as strong as they taste).
Then, walk east on Bourbon about 6 blocks, until you start hitting more bars. You'll find lots of locals and cheap prices. You might even meet an OT'er or two, Owlvis, mikel, etc. Thank me later.
