Of course it varies by place, but they do have them. Most of these chains have a regional warehouse and the stores all stock display models. Furniture stores are mostly the same way.
So, it's in stock, just not at that store. I recently bought a new washer and dryer and they delivered mine the next day from the warehouse.

If in BR, avoid the big box stores. Try Stantons (or even Stantons scratch and dent since it is just a freezer), Sherwood Appliance, Bellelos, etc.

My Lowes in Houma has 4 models of uprights in stock with a total of 7 units on hand, also have models of chests in stock with a total of 15 units on hand.
HD has zero.
Conn's has 10 models in stock, 5 upright, 5 schest.
No doubt my local mom and pop store Rod's has some as well.
Sounds like a very regional issue.

I accompanied my FIL to Lowe’s to shop for one and some of the display models were stocked. I was also surprised that Lowes had their display refrigerator/freezers plugged in and working. He asked for one that, after checking inventory, was not stocked so he picked another model and they had it delivered in 2 days.

Actually, it "use to be" that items were kept in stock, and people ordered online because it was cheaper. Do you think that customer service which was "free of charge" wasn't "really just tact on" to the price as well?
The reduction in retail space necessary to stock all this stuff locally has created cost savings. Brick and mortar was forced to adapt because online was cheaper. Yeah it sucks if you absolutely gotta have something today, but the vast majority of the time I know about an appliance purchase a day or two ahead of time.
