Every good grill master or smoker knows how to adapt. If you see someone with "pulled" or shredded brisket, it's because it was dry
Got to learn to adapt. Throw the ribs in a broth and boil until tender and make it a gravy.
Id eat the wings though because I'm weird and like buffalo wings a little dry

I like to finish my smoked chicken/wings over direct heat to crisp up the skin and & give it some light charring as I sauce them

Damn I feel that. Early on I finished several successful racks but we had some people over and I raised the heat to get them done quicker. Ruined 4 racks and all we had was the sides. Humiliated and disappointed.

um use less charvoal? close the vents? I've never had that happen to my food. Looks like he left the shite on tje grrill about an hour too long,

I feel his pain. Last weekend I cooked Sweet Tai Chili Chicken and lo mein w/veggies on my Blackstone. Have cooked this 100 times. It my wife’s favorite thing that I cook.
Usually mix 50/50 flour and corn starch to coat the chicken. Somehow managed to grab baking powder and flour. Didn’t realize until afterwards when I was trying to figure out why the chicken tasted like arse.
Also, I mix my own sauce for the noodles. Soy, oyster sauce, ginger, sesame oil, and little brown sugar. Thought I had soy but was out so used teriyaki instead. Again, tasted like arse. Took couple bites and threw all of it in the trash. Was in a foul mood the rest of the evening.

Ribs appeared to be the main event of his cook, from what I could see, so I somewhat get it. Not the crying, but the disappointment and embarrassment of bombing in front of everyone.
I'm pretty hard on myself when I screw up food. It sucks.
