I work with a guy that had his first in his early 60s.
I think 40s is a fine and a good bet you'll be around until the kid is an adult.

I guess, but I wonder why we have evolved to where a 79 year old man can knock up a woman that is of age to give birth, but women get to a point where the older they get the more risky a pregnancy becomes then to the point they are not allowed to get pregnant.

Agreed. If we had another one right now (not possible) we'd have about a 17 yr age gap by the time the kid was born. I don't have the energy for all that

Because evolution is over 100’s of 1,000’s or even millions of years. Men have always been able to impregnate women as long as they can ejaculate. We haven’t evolved to this recently.
It’s more risky for women simply due to biology and all my generation that waits until 30+ to start having kids is going to find out the hard way that sometimes it takes a while and that prime birthing years are 18-30 when your body can more easily handle the rigors of pregnancy and your hormones are in a transition period.

That's just crazy. I didn't think about the other children he had and their ages until your earlier comment. I should have expected the age gap, but for some reason it still shocked me.
