Since you say pork fall under the Red Meat category Then I choose red meat. I was leaning towards seafood but with the inclusion of pork red meat wins easily.

Sausage, hog head cheese, boudin, tasso, pickled pigs feet, pork chops, ribs, pulled pork, etc.

What the hell kind of Southern board is this? Where is the pork?

BBQ, bacon, pork chops, tenderloin, ham, sausage, hot dogs, bratwurst, hash, carnitas, pork fried rice, pork vindaloo.

Red meat close second or tied for first, but can't believe you left out pig. Chicken and fish are trash compared to pig and cow.

I do enjoy Air and Sea Food. But I neither a ship or nor an aircraft, I'm a tank. You rebuild a tank with tank parts, a lot easier than boat or plane parts. I could do without crawfish longer than I could do without bacon.

Don't forget, it ain't just steaks and venison. Ham and sausage and glorious bacon are essential to my optimal nutrition. Oh shite, goats, too. They're the ducks of land food.
