Poor bastard probably only hangs out with like-minded vegan food Nazis, so his perception of how many vegans/vegetarians exist is greatly skewed.
Asheville is about as hippie/vegan a town as you'll find, and there might be just a dozen or so vegan restaurants. Asheville, BTW, has a LOT of restaurants.
He'll be back to working his organic hemp farm when he finds out there is no demand for what he and his green buddies are pushing.

I’d try that sandwich, but all of those sauces he has piled on it to make it taste better are definitely not healthy.

Unless you have had that sandwich your words are hollow. It is like saying your mom made you a chicken sandwich when you were 6 with a Great Value chicken patty therefore all chicken sandwiches suck.
The worst thing any vegan or vegetarian dish can do is call itself something it isn't. It sets up an unreasonable expectation that allows for stupid comparisons. It is like people who have limited palates or the limited vocabulary to express their palate say some unusual protein tastes like chicken, if it tastes like chicken why bother with some exotic, likely much more expensive, protein?

I tried a vegan version of a spicy fried chicken sandwich a chef I know had made for a few of us regulars to test out. It was a cauliflower-based patty with most of the normal stuff from the original sandwhich except for the breading the patty was coated with. It was ok, not something I'd intentionally buy though.
I have never had more gassy and obnoxious shite in my life as I did when it woke me up around 3AM.
