Too many people have tried Tofurkey for their vegan holiday meals only to be massively disappointed.
Calling it "Project Pollo" is foolish, even though Pollo Loco is taken (and good in a lot of cities).

Best of luck to him, but if I had a dollar for every restaurant that failed, even before the Democrats shut everything down for Covid19, I'd be super rich.

Vegan chicken is not chicken so he shouldn’t be able to call it such. I’m sure the soy fricks wouldn’t mind if I start peddling animal fat soy products that contain no soy.

Texas did this with plant based "meat" though I'm not sure the current status. You can't call it meat on the packaging.

The handful of people I know who are pescatarians always just call themselves meatless/vegetarian when people ask. 
Then they clarify that they eat fish/shrimp.
Maybe they found that not many people are familiar with the word "pescatarian" for whatever reason. Or maybe they started totally veggie-only and then opened up to seafood? No idea.
EDIT - The people I know who only eat veggies and seafood probably don't do it for colon cancer reasons. Two do it because of the love of animals thing, one does it because she just hates the taste of poultry/red meat.
