I thinks it more than pure strength.
In these types of death matches I imagine each side going berserk, and I'm willing to bet that a full grown chimp going insane is far more terrifying than any of those lineman.
Not only that but we have to take into account things like pain threshold and toughness. I imagine a chimp can rip into human skin much easier than vice versa. Any human would be hoping for death at that point.

Does this really matter if it takes the chimp 16 seconds to separate your shoulder socket? Because, at that point, the lineman is crying for his mommy and the chimp is ripping off ears, testicles, and whatever else he feels like removing, since he needs to stick to soft tissue, as the arm separation must have made him very tired.
