I think you’re going to find that this is simply not the case. I don’t know how old they are, but your in-laws probably aren’t going to be able to climb in and out of the third row (if they can even fit back there). Meanwhile, trying to strap an infant or toddler into a car seat in the third row strikes me as an absolutely miserable experience.
Then, on top of all that, most SUVs with 3 rows eat up most/all the cargo space when the third row is up.
Third row SUVs are fine if you have kids old enough to climb back there and strap themselves in. Otherwise, I’d suggest you’re better off with a minivan or a regular SUV (many come with a folding third row regardless, but I wouldn’t make this a huge part of my buying decision with one infant child).

The anchors are highly visible on the seats in the middle row on the pilot, so I think that will be the plan.
The in-laws will sit next to the baby and in the back when they ride with us.

Minivan is by far the best with young kids. I know the wife might thumb her nose at first but in the end the automatic doors and plenty of storage room trump the stigma.

Also, your inlaws will probably much rather just drive their own vehicle to whatever destination you are going to.
Of all the dumb reasons to try to justify this purchase, needing space for your in laws to ride with you might be the dumbest.

No you WANT a third row difference. In no way shape or form do you NEED a third row for 1 kid. This is coming from a father of 3 with a third row Tahoe that we hardly EVER use. The only time it gets used is on a long (3+ hours) trip, if the oldest doesn't want to sit in between the 2 car-seats.
Save the money and get something with a little more cabin space.
And now that you are going to have a kid, learn the difference between a NEED and a WANT.

Wife had a QX60 that was an excellent vehicle for 10 years (other than the CVT issue that was fixed).
Replaced it 6 months ago with a new one that has an automatic (non-CVT) and it's been great.
Pathfinder is the non-luxury version of same platform, so I don't see the issue.
