My three year old's 3rd Black History Month

My wife's ancestors are from Morocco, Spain, & America, making her Spanish-African-American. I'm from Ireland and America and am as white as they come. How much of February, March, and May should I let him celebrate his heritage? I'm thinking 1/3 each but not sure how he should celebrate.
Should we go our usual Poppeyes/Corned Beef/Cinco de Mayo route while holding our drywall knives sideways when we're not drinking & beating our wife or get creative and do something else?

Are you saying your child identifies as black when he is obviously the same shade as mom? Apparently her dominant genes reflect in his appearance. So, is he Spanish or is he black? Either way, he can celebrate black history month because it is a thing.
